Banana Oatmeal Pancakes

Two day’s ago I made these amazing Banana Oatmeal pancakes. I was looking for a healthy version of my beloved pancakes and this is the recipe that caught my eye. It was very interesting to make, because I was not used to making pancakes with such a thick batter. My first batch came out looking like  mutant pancakes, but when I got used to it, the presentation was much better with the second batch. Although both batches tasted exactly the same. One batch was just better to look at hahaha. My camera has committed suicide, so I had to borrow some pics from google images (gotta love google right? And I found that they both pics looked exactly like both my first batch and my second batch on pancakes)

(This is exactly what my first batch looked like…I think they may be twins!)

But once I got used to the batter and how to pour and cook it, they looked more presentable.

(Now take away the pretty orange, the tasty looking bacon, and the topping of butter, and this is what my second batch looked like :D )

Recipe

3/4 cup of oat bran (I just used Quick Oats)

1/2 cup all-purpose flour

1/4 whole wheat flour ( I didn’t have any on hand, so I just added another 1/4 cup of all-purpose flour)

1 tablespoon baking powder

1/2 teaspoon Cinnamon

1 medium banana- cut into quarter sized

1/4 cup egg substitutes ( I just used medium sized egg)

1 cup low-fat milk – (I used whole milk)

1 tablespoon maple syrup

2 teaspoons Canola Oil

Directions

-In a large bowl, Combine the Oatmeal, flour, baking powder, and cinnamon

-In a separate medium bowl, beat together the egg, milk, oil, and syrup.

-Add the wet ingredients to the dry ingredients. Mix until just combined. Fold in the banana’s.

-Prepare a griddle or large frying pan by setting the heat to medium and spraying generously with cooking spray ( I just used butter)

-Dollop the batter 1/4 portions to make each pancake cook until bubbles appear on the top and the edges start to look dry. Then flip on other side and let cook until golden brown.

-Serve warm with your favorite toppings. I tried three different topping. The first was with fresh chopped strawberries and some syrup, the second was with strawberry jam and syrup, and the third was with a smudge of cream cheese ans some syrup. All three were absolutely delicious, but my favorite was the one with the strawberry jam. Num Num Num.
